12 Days of Cookies Day 3: Mimi's Frosted Mocha Drops

Mimi Ramsbottom of Omaha submitted her recipe for soft chocolate cookies topped with a smooth blend of chocolate and coffee flavors.

Mimi's Frosted Mocha Drops

½ cup butter

2½ ounces unsweetened chocolate squares

1 cup brown sugar

1 egg

1 teaspoon vanilla

½ cup buttermilk

1½ cups flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup chopped walnuts

1 cup semisweet chocolate chips

Melt the butter and chocolate squares. Blend in the brown sugar, egg, vanilla and buttermilk. Add the dry ingredients: flour, powder, soda and salt. Stir in the chopped walnuts and chocolate chips.

Drop by rounded teaspoon (or cookie scoop) on cookie sheet. Bake for 10 minutes at 375 degrees.

Let cool and then frost each cookie. Add a walnut half or chopped walnuts on top of frosting.

Frosting

¼ cup butter

2 tablespoons cocoa powder

2 teaspoons instant coffee

2½ cups powdered sugar

1 teaspoon vanilla

Milk as needed

Test kitchen notes: I wondered if this recipe should have called for more flour because in the mixer bowl, it didn't look like it would hold together. But I was surprised; they baked up just fine. I iced each cookie liberally and still had leftover icing.
